¼ teaspoon cayenne pepper (or to taste)
Brown the corn in butter using the “browning” setting on the cooker. This
should take about 10 minutes for the corn to turn golden and very sweet.
Change to the slow cooker setting and add the remaining ingredients. Stir well.
Cover and cook for 6 hours. Serve with crusty French bread. For a creamy ver-
sion, stir in 1 cup sour cream and serve.

2 cups shredded zucchini
1 ½ cups diced onion
1 cup sliced carrots
1 cup diced celery
1 ½ teaspoons oregano
1 ½ cups diced tomato, fresh or canned
1 tablespoon prepared pesto
½ pound diced boneless skinless chicken
6 cups chicken stock
Salt and pepper to taste
Combine all the ingredients in the slow cooker. Cover and cook for 8 hours.
When done, stir in 2 cups cooked rice or 2 cups cooked noodles if desired.

1 ½ pounds diced boneless skinless chicken
1 ½ cups diced bell pepper
1 cup diced red onion
1 cup pineapple chunks, drained. Reserve juice.
1 – 8 ounce can sliced water chestnuts, drained
½ cup reserved pineapple juice
2 tablespoons Hoisin Sauce (found in the Asian aisle of most grocery stores)
1 teaspoon soy sauce
1-16 ounce can Sweet & Sour sauce
In a bowl, combine the Sweet & Sour sauce, soy sauce, Hoisin sauce, and
pineapple juice. Place the remaining ingredients in the slow cooker and pour
the sauce over. Cover and cook for 6 hours. Serve over hot rice.

Serves 4, Cooking time: 6 hours
1 ½ pounds top sirloin thinly sliced.
1 large onion thinly sliced
½ pound mushrooms, thinly sliced
½ teaspoon thyme
2 cloves of garlic minced
1 cup beef stock
Salt and pepper to taste
1 cup sour cream
Combine the ingredients, reserving the sour cream, in the slow cooker. Cover
and cook for 6 hours. When cooking is complete stir in 1 cup of sour cream.
Serve over cooked noodles or mashed potatoes.

Serves 6, Cooking time: 30 minutes + 8 hours
1 pound dried red beans
4 cups water
3 ribs celery, diced
1 bell pepper, diced
1 onion, diced
2 small bay leaves or 1 large
8 ounces Andouille sausage, diced
1 teaspoon dried thyme
1 tablespoon Tabasco or hot pepper sauce (or to taste)
Rinse and drain beans and place in cooker. Add water and stir. Cover and cook
on the pressure setting for 30 minutes. Release the pressure and add the re-
maining ingredients. Stir well. Cover and cook for 8 hours in the slow cooker.
Serve over hot rice.
