b) Petits Délices
• When the preparation process ends, lift the strainer by the lip, turn it
through a quarter turn and replace it in the pot so that it is in the
straining position

. Replace the lid and put the pots in the
fridge.
• Allow the petits Délices to drain on average 12 hours in the refrigerator.
• The end result depends on the time you allow for draining (moist,
semidry, dry). For a drier product, regularly empty out the whey that
collects at the bottom of the pot. Put the strainer in the straining
position.
• Tip the cheeses out into a bowl and blend with pouring cream.
• Distribute the mixture in clean pots and store in a cool place.
• For a firmer consistency allow more time for draining.
Preservation
• The cheese preparations should be kept chilled and should be eaten at
the latest within seven days.
